A pantry is the one closet where the shelving does the work. Wire shelves from the builder sag under a case of cans, drop small items through, and are all the same depth, so the back half of every shelf is where food goes to expire. A built pantry has shallow shelves at eye level so every can is one row deep, deeper shelves lower down for bins, bread and the mixer, and a tall space at the bottom for the recycling and the vacuum.
We build it in place. Fixed shelves sit on cleats screwed into every stud along the back and side walls, so a full shelf of canned goods loads the framing, not drywall anchors. Adjustable shelves sit on metal standards screwed into studs or on shelf pins in a side panel, so the spacing can change when the household does. Most pantries end up with a mix: fixed where the heavy stuff lives, adjustable above.
Material is painted plywood with a solid edge, which looks like the kitchen trim and takes a wipe-down, or white melamine, which goes in finished and costs less. If you plan on pull-out baskets or drawers, tell us before we build. A pull-out needs a side panel or a box to mount its slides to, and a fixed shelf above it at the right height, and that is easy to build in and hard to add later.

Reach-in pantry rebuild
Wire shelves out, fixed shelves on cleats in, shallow up top and deep below, a tall bay at the bottom. The most common pantry job.
Walk-in with three walls
Shelving on the back and both side walls, corners worked out so nothing is trapped, a deep landing shelf at counter height for the mixer and the coffee maker.
Adjustable shelves on standards
Metal standards screwed into studs with clips, or pinned side panels, so shelf heights change as your storage does. Painted or melamine shelves.
Pull-out ready
Side panels or a lower box built to take pull-out baskets and drawers on slides, with the shelf above set at the right height. Pull-outs installed now or later.

How deep should pantry shelves be?
Shallow for cans and jars, so nothing hides behind anything else, and deeper lower down for bins, bread, cereal boxes and small appliances. The mistake is one deep shelf top to bottom. We set the depth per shelf from your list of what goes in: eye level shallow, waist to knee deeper, and a tall open bay at the floor for the vacuum, the step stool and the recycling.
Should pantry shelves be adjustable or fixed?
Both, in most pantries. Fixed shelves on cleats screwed into the studs carry the heavy things, cases of cans and appliances, and never sag. Adjustable shelves on metal standards or shelf pins go above them, where lighter things live and the spacing might change. A pantry that is all adjustable flexes; one that is all fixed cannot change. The mix is what works.
Can you replace wire pantry shelves with wood?
Yes. The wire shelving and its clips come out, the holes are patched, and wood or melamine shelves go in on cleats screwed into the studs. The new shelves hold a full load of cans, do not drop small items through, and can be set at the depths the food needs instead of one depth for everything. A reach-in pantry is a half-day job.
Painted plywood or melamine for pantry shelves?
Painted plywood with a solid wood edge looks like part of the kitchen, is stiffer over a long span, and takes a wipe-down once it has a hard enamel on it. Painting is quoted as a separate line — or leave it primed and paint it yourself. White melamine goes in finished, costs less and wipes clean, and is fine for a pantry nobody will see with the door open. Both go on cleats into studs the same way.
Can I add pull-out drawers or baskets to a built-in pantry?
Yes, if the shelving is built for it. A pull-out needs solid side panels or a box to mount its slides to, and a shelf above at the right height. We build that in from the start, so the pull-outs can go in on day one or years later. Adding pull-outs to shelves that sit on cleats with drywall at the sides does not work well, which is why we ask before we build.
Can you build a countertop into a pantry for small appliances?
Yes. A deeper shelf at counter height, in plywood with a solid edge or a piece of laminate or butcher block you supply, gives the mixer and the coffee maker a home with an outlet behind it. Shallow shelves go above it and bins below. If there is no outlet in the pantry, an electrician adds one before we build.
